Gram's Shortbread

Course Dessert

Ingredients
  

  • 1 c cornstarch
  • 1 c icing sugar
  • 1 lb salted butter, softened
  • 2 1/2 to 3 c flour

Instructions
 

  • Preheat oven to 350 degrees.
  • Mix together dry ingredients: start with 2 1/2 c of the flour.
  • Add butter and mix together with your hands / a pastry cutter / or a mix master with pastry attachment.
  • Create a small ball and flatten with a fork. This is the test cookie.
  • Test one cookie in the oven. If the cookie falls apart, it's too rich and you need to add the extra flour.
  • Once the test cookie does not fall apart, roll you into balls, place on a cookie sheet spaced apart and flatten with a fork. Decorate with holiday sprinkles or holiday fruit like candied cherries.
  • Bake approximately 12 minutes until the bottoms start to brown. Cool on a cookie rack.

Notes

This recipe makes about 4 to 6 dozen, depending on the size of your cookie, and how much raw dough you consume!
