Sausage and Pepper Pasta

Ingredients
  

  • 3 Tbsp olive oil
  • 3 cloves garlic
  • 1.5 lbs hot or sweet Italian sausage (or a combination)
  • 1 large yellow pepper, cut into strips
  • 1 large red pepper, cut into strips
  • 1 large onion, sliced
  • 1 large can diced tomaotoes, with juice
  • t Tbsp basil
  • 1 Tbsp oregano
  • 1 454 g bag penne, cooked
  • grated parmesan cheese

Method
 

  1. Cook penne per instructions, drain and set aside.
  2. Heal oil in heavy large skillet. Add garlic (minced or sliced thinly) and cook until translucent, about 1 minute. Be careful not to burn.
  3. Cut sausage in 1 inch pieces. Add to garlic and cook until browned, about 8 minutes.
  4. Add peppers and onions, and cook until almost tender (about 5 min) stirring occasionally.
  5. Add can of tomatoes, with juices, basil and oregano. Season with salt and pepper.
  6. Cover and simmer about 8 to 10 minutes.
  7. Pour over pasta and toss.
  8. Serve, topped with grated parmesan as desired.

Notes

  • try removing the sausage from the casing before cutting
  • mix the peppers up if you like with what you have on hand
  • serve this up family style in a large serving dish with fresh bread and a salad on the side for a quick and yummy meal
