The holidays are here so I am sharing my best waffle recipe. It’s an overnight recipe that is now the staple of our Christmas morning brunch. I whip this up the night before and iron them up in the morning while the youngin’ work on the eggs benedict and mimosas. I serve them with maple syrup and / or with whip cream and berries.
We moved to BC almost 20 years ago when my husband joined the Navy. It brought us halfway across the country to a city where we knew no one. It became super important that first year to ensure the kids didnt get homesick so that first Thanksgiving, I figured out how to stuff and cook a turkey. That is the year Jordan cried in delight when we sat down to eat all our favorite foods! I wonder, in hindsight now, if she thought I didnt have it in me. LOL
I think Christmas 2006 was the year we started making eggs benditct, a west coast favorite. And its been on the Christmas morning menu ever since. Maybe 7 years or so ago I asked for a waffle maker, which I received, and thats when we added waffles to the menu. I have tried a few different versions but this is the one I gravitate to for special occasions. A little bit more complex than my everyday waffle, but worth it. PSST — I will share a secret though, the first waffle is always the worst and usually a throw away.
We had two Christmases this year. One a few weeks early as my middle child started her patrol on Dec 17th. And then again on Christmas morning. And these waffles were on the menu both times. I think New Years Day may be a good day to enjoy these treats one last time before the holidays are over, with a side of eggs benedict of course!

Method
- The night before, combine water, yeast and sugar in very large bowl. Allow to sit about 5 minutes until the yeast has dissolved and starts to foam.
- Stir in the milk, melted butter, honey, vanilla and salt.
- Add the flour and whisk until batter is smooth.
- Cover the bowl with pastic wrap and allow it to sit overnight at a cool room temperature.
- The next morning, beat the eggs together with the baking soda and whisk into the overnight batter until combined.
- Pour the batter on a heated and sesoned (either with melted butter or cooking spray) waffle iron. Cook per waffle instrcutons until the waffles are golden brown.
- Top with powederd sugar and/or serve with syrup, whipped cream and fruit as desired.
