Let Go of My Eggo: Waffle Mania

Most of you are probably too young to remember Eggo Waffles, even though they are still around today.  In my house, they were a treat and not included on the weekly grocery list. As a mom of three, I bought them every now and again, mostly to ensure my picky eater had something in his belly before school.  I have also watched in our 35 plus years together, my husband eat at least a half a box of chocolate Eggo Waffles as a “midnight snack” before bed.  Like come on — have you every seen him?  Still skinny as a rail with a high metabolism, unlike me with my post menopausal body. Life is just not fair sometimes. Regardless, he is still the love of my life.  I have digressed somehow here.

As I have aged, so have thy taste buds and I am constantly on the hunt for a good waffle recipe.  I have a special recipe I use at Christmas which is an overnight recipe that I whip up just before bed on Christmas Eve to enjoy for Christmas morning with our mimosas and eggs benedict. That recipe calls for and uses yeast — I will share that closer to the holidays.  I have now found a decent recipe that I have been making on a more regular basis, just because.  I keep working on the perfect weekend waffle and Nonna cannot wait until she is able to make them on a regular basis for Tanner.  Last summer my niece visited with her kids and it made my heart go pitter patter when her youngest daughter pulled the stepstool up beside me to help when I was making waffles.  She helped me pour, flip and time the waffles.  I cannot wait to share that experience with Tanner!

Here is the thing about waffles:  sweet, savory, topped with syrup, topped with peanut butter, topped with whip cream and an assortment of berries like strawberries, raspberries, blackberries, blueberries, you name it.  YUMMMMM ….. or what about sliced bananas!!  I think I even saw one of the kids put their eggs benny on a waffle once too.  And if your up to it, you can indulge like those in the South and go with chicken and waffles!  So many options!

In the last five or so years, waffles have become a thing in my house.  So much so, I think its time to upgrade my waffle machine to one that makes more than just one at a time!  You know, another kitchen gadget to make me even happier in the kitchen cooking for the ones I love.

So here it is, my basic waffle recipe.  I would love for you to try it and tell me how it worked out.  And how you topped it!

Easy Sunday Waffles

Course Dessert

Ingredients
  

  • 1 c all purpose flour
  • 2 TBSP sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 c milk
  • 2 large eggs
  • 4 TBSP butter, melted
  • assorted berried, cleaned
  • whip cream
  • table or maple syrup

Instructions
 

  • Preheat waffle iron lightly sprayed with cooking spray.
  • In a large bowl, whisk flour, sugar, baking powder and salt together.
  • In a small bowl, whisk milk and eggs together.
  • Add the wet ingredients to the flour mixture. Whisk genntly to combine.
  • Mix in melted butter.
  • Pour approx 1/2 to 3/4 cup of batter on your heated waffle iron. Cook approx 2 min.

Notes

The amount of waffle mixture will vary depending on the size of your waffle iron, as will your cooking time.  Follow manufacturing instructions.
Serve with heated syrup or whip cream and fresh berries.
